  • Cameron Scoles

    DIRECTOR OF PROJECTS

    Cameron has been in the hospitality industry for over 18 years, working with some major hospitality establishments across all areas including front of house and kitchen. Coming from a family background in construction and design/ draftsmanship, Cameron made his transition in 2014 to the hospitality supply and sales sector. Here he found his passion and comfort in providing solutions, design, and project management for existing sites and new builds within the hospitality space.

    Since founding D&C Catering in 2021, Cameron’s key role is running the day-to-day part of the business and supporting clients on each build.

    His passionate and dedication to the industry, drives him to gain an understanding of the individual’s needs. He is a strong believer in working in partnership and applies this value every single day.

    Cameron always states that the goal for him and the Directors for D&C Catering is to build an offering of premium solution for clients.

    “We work closely with our key suppliers to provide an outstanding solution which in return gives our clients peace of mind”.

    Cameron’s additional skills lay in project management and relationship building. He has extensive knowledge in kitchen and bar layouts for easy workflow and a keen knowledge around the healthcare market.

  • John O'Connor

    DIRECTOR OF SERVICES

    With 29 years in the plumbing industry, John brings extensive technical expertise and a strong service-focused approach to his role as Director of Services at D&C Catering. Over his career, he has become a preferred contractor to some of Australia’s largest hotel groups, with many clients continuing to work with him since the early 2000s — a reflection of his consistency, reliability and genuine investment in their success.

    John is a natural problem solver who prides himself on his work ethic and his core values of workmanship, care and passion, all delivered with his trademark “can-do” attitude. He understands the importance of teamwork and knows how a lack of detail or care can impact an entire project. This commitment has earned him an exceptional reputation and sustained demand for his expertise.

    Having spent many years rectifying the work of others, John is driven to ensure every job is completed to a high standard, built to last and practical for ongoing maintenance. He’s the plumber who notices a light left on in a storeroom and turns it off — a small example of his belief that getting things done properly shouldn’t require a premium price, just the right team with the right mindset.

  • Michael Deakin

    DIRECTOR OF MANUFACTURING

    Michael started in the hospitality industry at 16 years old in the UK. Over the years, he has built extensive knowledge and experience working with all types of metalwork, including brass, copper, aluminium and stainless. As a highly technical kitchen and bar draftsman, Michael is proficient in CAD Design and has a strong sense of creativity, attention to detail and an open-minded approach to each project he undertakes.

    Driven by a long-standing passion for architectural steel and the challenges it presents, Michael relocated to Australia in 2008 to pursue new opportunities. Coming from a big rugby family, he quickly embraced the Australian way of life. Over the years, he has continued to refine his craft and build a strong reputation across both the commercial and residential sectors.
